Choose the T350 if thin and toe strikes cost you the green.
Choose the T250 if you find the middle of the face most of the time and want the smaller head, or a 2- or 3-iron, which the T350 is not made in.

The T350 is the most forgiving iron in Titleist's T-Series: a game improvement head for mid to high handicaps, larger than the T250's. The T250 is a players' distance iron for mid handicaps, which Titleist sells to golfers who want "speed, stability and consistency in a more forgiving shape". Both have a forged L-Face and Titleist's split tungsten weighting, and the T350's lofts are a little stronger (a 29° 7-iron against 30.5°), so set them side by side club for club rather than by the number on the sole.
Titleist's most forgiving T-Series iron: a hollow game improvement head with a forged face, larger than the T250, aimed by Titleist at mid to high handicaps.

The G740 gives more help on paper: it is PING's super game improvement head, with a wider sole, a longer blade, a thicker topline and 4.8 mm of offset at the 7-iron, which PING says lower the centre of gravity and raise the MOI.
Both are players distance irons, the class between a game improvement iron and a players' iron, and both score 2 of 5 here because neither maker publishes an offset or a sole width.
The T250 is the more forgiving, in Titleist's own words: it "offers greater ball speed, height, distance, and forgiveness" in a slightly larger head, where the T150 "is closer to a player's iron shape with moderate forgiveness and precision".
